The short version
Most additives used in meat alternatives (emulsifiers, gelling agents, flavour enhancers) are permitted because safety agencies judge them safe at the amounts used. Monosodium glutamate (E621) is a textbook case of a poorly founded fear: blinded studies do not confirm the famous “Chinese restaurant syndrome.” The real issue is almost never a single additive but the fact that many of these products are ultra-processed and sometimes high in salt and saturated fat. A veggie burger is still a handy, useful way to cut back on meat; it just does not replace a plate of legumes, whole grains, and vegetables. Meat alternatives: what we are talking about
The term “meat alternative” covers products designed to replace meat by imitating its taste, texture, or appearance. The most common bases are soy proteins (tofu, tempeh, textured vegetable protein), wheat gluten (seitan), pea protein (used in some burgers), and, more recently, mycoprotein from fungi or ingredients made through precision fermentation. Those bases are then worked with vegetable oils, flavourings, salt, and various texturizing additives.
Not all of these preparations are alike. At one end sit “rustic” products made from lentils, red beans, or plain tofu, with a short ingredient list. At the other end sit highly engineered items that try to copy a rare steak faithfully. To get that muscle-like fibrousness, the industry uses extrusion, a process that stretches and aligns plant proteins under heat and pressure. It is precisely in this heavily processed category that additives multiply, because raw plant proteins lack the elasticity and juiciness of animal proteins such as myosin.

Why manufacturers add additives
A food additive performs a specific technological job: improving texture, flavour, colour, shelf life, or stability. Three challenges explain their presence in a meat alternative.
The first is texture. Pea or soy flour does not form fibres the way meat does. Texturizers and stabilizers rebuild tenderness and stop the product from falling apart during cooking. The second challenge is taste. Meat has a complex profile, with grilled notes, a metallic edge, and a strong umami savour. To get close, makers sometimes use flavour enhancers or aromas. The third challenge is preservation and appearance: colorants for the hue, antioxidants and preservatives to extend shelf life.
These additives are approved by regulators before they reach your plate. The legitimate consumer question is less about any single additive than about their accumulation in an already heavily industrialized diet. That distinction, between an authorized substance and an overall processed diet, is what the whole debate turns on.
The most common additives and their roles
In the ingredient list of your meat alternatives, you will regularly find the following families:
- Texturizers and gelling agents such as xanthan gum or methylcellulose (E461), which give structure and a juicy result when cooked.
- Emulsifiers such as soy lecithin (E322), which keep water and fats mixed evenly.
- Flavour enhancers, chief among them monosodium glutamate (E621), which boost savour.
- Colorants, natural (beetroot, paprika E160c) or synthetic, which reproduce the pink of raw meat or the brown of cooked meat.
- Preservatives and antioxidants such as ascorbic acid or citric acid, which slow oxidation.
- “Smoked” or “grilled” flavours, often of natural origin, which suggest grilling.
Alongside these additives in the strict sense, you also find protein isolates (soy, wheat, pea) and hydrolysates. These are not regulated additives, but their presence signals a high degree of processing. They mainly serve to raise protein content and bring the texture closer to meat.
Understanding E numbers
The “E” prefix looks alarming, but it means nothing more than a substance authorized in the European Union and the European Free Trade Association, after a safety assessment. The “E” stands for “Europe.” Some E numbers in fact correspond to perfectly harmless compounds: vitamin C carries the number E300, soy-derived lecithin the number E322. The system is organized by ranges:
- E100 to E199: colours.
- E200 to E299: preservatives.
- E300 to E399: antioxidants and acidity regulators.
- E400 to E499: thickeners, stabilizers, and emulsifiers.
- E500 to E599: acidity regulators and anti-caking agents.
- E600 to E699: flavour enhancers.
An E number on its own therefore says nothing about danger. Methylcellulose (E461) and glutamate (E621) both appear on a label, yet their profiles and the debates around them have nothing in common. Reading an E number means identifying a function first, not a risk. Switzerland largely aligns with the European framework, which explains why the same numbers appear on products sold here. The additives that really spark debate
Monosodium glutamate (MSG, E621)
This is the most criticized additive, often unfairly. Glutamate is an amino acid naturally present in tomatoes, mushrooms, and aged cheeses; as an additive, it is made by bacterial fermentation, like vinegar or yogurt. The US Food and Drug Administration classifies it as “generally recognized as safe” (GRAS). The “Chinese restaurant syndrome,” which links headaches and tingling to MSG, is described by scientific reviews as a misconception: several double-blind studies find no effect when MSG is eaten with food at normal concentrations. A 1995 FASEB report commissioned by the FDA concluded that MSG is safe “when eaten at customary levels,” while noting that a subgroup of sensitive people may feel transient symptoms after a large dose taken without food. In short: no demonstrated danger at the amounts found in a veggie burger.
Methylcellulose and carrageenan
Methylcellulose (E461) is a cellulose derivative that the body does not digest. It swells by absorbing water and forms a gel when cooked, which makes a veggie burger juicy. Based on regulatory data, it is described as non-digestible, non-toxic, and non-allergenic; it is in fact used in pharmacy as a bulk-forming laxative. Carrageenan (E407), extracted from red algae, acts as a thickener. It has fuelled arguments about possible intestinal inflammation at high doses. Two substances need to be told apart: food-grade carrageenan and “poligeenan” (degraded carrageenan), which is not a food additive. In 2018, EFSA’s additives panel re-evaluated carrageenan (E407) and concluded that “there is no evidence of any adverse effects in humans from exposure to food-grade carrageenan,” setting a group acceptable daily intake of 75 mg per kilogram of body weight per day. Its use in infant formula is nonetheless banned in the European Union as a precaution, while it remains permitted in other foods.
Artificial colorants
Some synthetic colorants remain under scrutiny. Six azo dyes, known as the “Southampton colours,” have been linked to a possible increase in hyperactivity in some sensitive children. In response, the European Union requires a warning on products that contain them: “may have an adverse effect on activity and attention in children.” In a meat alternative, makers most often prefer natural colorants (beetroot, paprika), but the presence of a synthetic dye is a useful red flag to spot on the label.
Titanium dioxide (E171) and flavours
Titanium dioxide (E171), a whitener and opacifier, shows how regulation evolves. The European Union banned it as a food additive in 2022, after EFSA judged that it could not rule out a risk of genotoxicity. It remains permitted in other countries, including the United States and Canada. Artificial flavours, finally, are not dangerous in themselves, but their presence often signals a heavily engineered product, far from a whole food.
What the science says about health
Every authorized additive has been evaluated and given an acceptable daily intake (ADI), the amount you could consume every day for life without appreciable risk. These evaluations sometimes differ between countries: an additive allowed here may be restricted elsewhere, as the E171 case shows. The main grey area remains the combined effect of several additives eaten together, within a diet already rich in processed products.
The most solid debate, then, is not about a specific additive but about ultra-processing. The NOVA classification places many meat alternatives among ultra-processed foods. An umbrella review published in The BMJ in 2024 pooled 32 meta-analyses and found associations between high consumption of ultra-processed foods and various health problems, from excess weight to cardiovascular disease. Two important caveats come with that result: these studies are observational, so they show an association rather than cause and effect, and the authors stress heterogeneity between categories of ultra-processed foods. A yogurt and an industrial cured meat end up in the same group even though their profiles differ.
Nutritionally, most meat alternatives deliver good amounts of protein. The point to watch lies elsewhere. Some are high in salt or saturated fat depending on the oil used. The WHO recommends keeping salt below 5 g per day (2 g of sodium), favouring unsaturated fats, and eating at least 400 g of fruit and vegetables daily. A salty meat alternative eaten regularly can weigh heavily on that budget, especially for people with high blood pressure. Conversely, nitrite-based products are not the issue here: those preservatives, linked by IARC to processed meats classified as carcinogenic, concern animal cured meats, not plant-based substitutes, which generally do not contain them.
Meat alternatives and the environment: a qualified claim
One selling point of meat alternatives is ecological: replacing meat, especially ruminant meat, generally lowers a meal’s carbon footprint. At heart, producing plant proteins usually emits fewer greenhouse gases and uses less land and water than livestock farming. But a heavily processed meat alternative is not automatically the most virtuous option. Industrial processing, packaging, and transport all carry a cost, and an over-wrapped imported veggie burger does not have the same balance sheet as a plate of local lentils. The environmental argument holds up well at the level of the overall diet, less so at the level of a single product. Nutrition: a substitute is not meat
Beyond additives, the nutritional profile is worth a look, because a meat alternative does not automatically reproduce all of meat’s nutrients. On protein, many products do well, especially soy-, wheat-, or pea-based ones, which can offer comparable amounts per serving. For iron and vitamin B12, the picture differs. Meat contains heme iron, which the body absorbs particularly well, and natural B12. Asking “is this additive dangerous?” is often less useful than asking “what place does this product hold in my diet?” A veggie burger once a week, in a week otherwise rich in vegetables and legumes, is not a problem even if it contains a few E numbers. Decoding the label: practical tips
- Read the whole ingredient list. A short list with recognizable ingredients (pea protein, sunflower oil, spices) beats a string of vague entries like “flavourings.”
- Check the salt and saturated fat in the nutrition panel. That often matters more for health than the presence of an emulsifier.
- Be wary of marketing claims. A “100% natural” or “additive-free” pack still deserves a look at the real list.
- Do not demonize all E numbers. Lecithin (E322) comes from soy, ascorbic acid (E300) is vitamin C. The E number alone says nothing about danger.
- Compare several brands. Composition varies widely from one product to the next.
