Soy milk is the most reliable: high in protein (around 3 g per 100 ml for a concentrated plain soy), it coagulates well and produces a yogurt close to a classic one. 3. The ingredients in detail
1. Plant milk. Prefer good-quality milk, ideally additive-free. Some industrial milks are thickened with xanthan or guar gum, which can disrupt the set. Soy milks containing at least 7% soy are especially suitable: the more protein, the better the yogurt sets.
2. Cultures. A culture packet made for plant yogurt, or a plain starter yogurt. Always follow the manufacturer’s directions: strains and doses vary.
3. A thickener (optional). Depending on the firmness you want, a natural binder helps: agar-agar, cornstarch or tapioca starch. Agar-agar must be heated to gel, so add it at the start while heating the milk.

2. Heat the milk. Pour about 1 liter of milk into the saucepan. For agar-agar, add 1 to 2 grams (a level teaspoon) depending on firmness. Heat gently, stirring to avoid lumps: 80 to 90°C is enough to activate agar-agar. Remove from heat and let it cool to 40-45°C before adding the cultures. 3. Add the cultures. Take 2 to 3 tablespoons of warm milk in a bowl, add the culture packet or starter yogurt, mix well, then pour back into the saucepan. The milk must not be too hot. Stir slowly to distribute the cultures.
4. Fill the jars. Pour the mixture into the jars and close them to retain heat.

- Respect the temperature. A 35 to 45°C range favors the good bacteria. A preparation left long at room temperature (20-25°C) ferments poorly and risks being colonized by unwanted microbes.
- Trust your senses. A clearly putrid smell, mold (green, black, fuzzy spots), an abnormal color or a truly unpleasant taste are warning signs: discard the batch. Slight acidity and a thin liquid layer on top, on the other hand, are normal.
- Refrigerate promptly. Once fermentation is done, cold stabilizes the yogurt by slowing the bacteria sharply.
- Eat it soon. Most homemade plant yogurts keep up to 7 days in the fridge. Watch for any mold or off smell.

- Duration: one week in the fridge, watching appearance and smell.
- Reactivation: take one or two tablespoons of fresh, living yogurt to start a new batch (self-inoculation). After several cycles, the cultures weaken; then start from a new culture.

Yogurt too thin. Check temperature and duration, extend a little. Add a thickener or choose a milk richer in protein (soy). Make sure there is a minimum of sugar if the milk contains little.
Too acidic. Reduce fermentation time or keep the temperature just below 40°C. Taste regularly to stop at the right moment. A milder milk (rice) softens the result.
Separated layers. Some milks settle: a thick layer on top, a thinner one below. Stir before dividing into jars, or use a milk richer in protein.
Bubbles or foam. A light foam can appear if you shake too much or if fermentation is vigorous. Stir gently and watch the temperature.
No fermentation. Check the date on the cultures or starter yogurt: they may no longer be active. Make sure the temperature did not exceed 50°C, which would have killed the bacteria. Check the cleanliness of the equipment.

Can you make plant yogurt without shop-bought cultures? Yes, by using a still-living plain plant yogurt as a starter. But you need an initial source of bacteria: you cannot make yogurt from nothing.
Does coconut yogurt set as well as soy? Rarely as firm, because coconut is low in protein. Thicken it with agar-agar or a little starch, or mix it with soy.
Does my homemade yogurt contain B12? No, unless the starting milk was fortified. Fermentation does not create reliable B12 in a plant milk.
